Holiday Season - Sweet Potato Onion Tart

The weather is getitng colder and the holidays are upon us. This recipe is quick and simple to make and everyone will love the savory sweet potatoes blended with cheese and seasonings. Perfect side for any meal!

Ingredients

  • 1 1/2 lb. Salt & Pepper Sweet Potatoes, diced (*Good Source Product)
  • 1 cup Red Onion, chopped
  • 2 tsp Olive Oil
  • 1 tsp Pepper
  • 4 each Eggs
  • 1/2 tsp Salt
  • 6 each Bacon Slices, cook & crumble
  • 1/4 cup Parsley
  • 1 each Pie Crust, refrigerated
  • 8 oz. Gruyere Cheese, shredded
  • 1 1/2 cup Half & Half
  • 1 tsp Rosemary

Instructions

Heat oven to 425°F. IN a bowl, toss sweet potatoes, onions, olive oil, bacon, parsley and pepper.

Fit pie crust into 10" tart pan with removable bottom. Line with foil and dry beans. Blind bake for 12 minutes. Remove foil and beans and bake for an additional 5 minutes.

Heat oven to 350°F. Divide sweet potato mixture and shredded cheese in half. Fill pie crust in alternating layers of sweet potatoes and cheese. 

Bake for 35-40 minutes. Let cool 15 minutes before serving.
